I love grilling whenever that I can…not only does it make everything taste delicious but the clean up is a lot easier than cooking with a bunch of pots and pans! Plus, now that it’s summer time, it’s nice to cook outside to minimize heating up the inside of your house. I made these really simple and easy grilled sweet potatoes the other day. They are delicious, healthy, and go great with almost any main dish. I posted a quick video on how I made these as well so check it out if you’d like! The recipe will also be listed down below too.
Grilled Sweet Potatoes
-1 sweet potato
-1 tablespoon olive oil
-salt and pepper to taste
-a pinch of cayenne pepper, optional
First, I like to microwave my sweet potato before hand just to make it easier to slice as well as decrease the time needed to grill them. I microwaved mine for about 4 minutes, until it was slightly tender but still firm. Then you slice the potato into wedges, toss them in olive oil, season with salt and pepper and add in a pinch or two of cayenne if you’d like.
Then just plop them on a preheated grill at medium-high heat and grill for 5-7 minutes each side and you’re all set. Enjoy!
