Sweet Sticky Rice with Sweetened Coconut Milk

I still remember the first time I ever tried this popular Thai dessert. It’s simple and easy to make plus it’s sweet enough to satisfy my sweet tooth but not too sweet that I feel like I’m getting cavities. This dessert can be made year round but is especially delicious when mangoes are in season (just like they are right now in my area…3 for $1 mangoes at the local grocery stores!) The recipe I have below is a simplified and straight forward version of this dessert…I believe the traditional way of making it requires a few more ingredients (which I don’t have on hand) and a few more steps! I hope you enjoy!!

Sweet sticky rice with mangoes & coconut milk

-1/2 cup of Thai sweet sticky riceĀ (I buy the Three Ladies Brand at my local Asian grocery store)

-1 can of coconut cream or milk

-1/2 cup of sugar

-1 mango, cut up into bite sized pieces

Soak the sweet sticky rice in water (room temperature) for about 4 hours (sometimes I leave it in a bit longer [like when I forget about it!] and it turns out fine). Drain the water. Set up your steamer and bring to a boil. Add in the drained sticky rice and steam for about 15 minutes or so until your rice is cooked all the way through and no longer has a hard bite to it. While the sticky rice is steaming, warm the coconut cream or milk over medium-low heat. Add in the sugar and stir to dissolve. There is no need to boil the coconut milk, we just want to dissolve the sugar in it. After your rice is finished, top it with mango and drizzle over the coconut milk. Enjoy!
